Kerala’s Spicy Mutton Fry is a dish inspired by traditional Syrian Christian cuisine, where meat is slow-cooked with spices and then pan-fried to perfection. The deep flavours come from slow roasting in coconut oil, making it one of the most sought-after dishes at family gatherings and special occasions.

Mutton – 500g, washed and cleaned

Red chilli powder – 1 tsp

Coriander powder – 1 tsp

Step 1
Wash the mutton and mix it with cumin powder, red chilli powder, coriander powder, turmeric powder, and black pepper powder. Let it sit for 30 minutes for better flavour absorption.
Step 2
Heat coconut oil in a heavy-bottomed pan. Add chopped garlic and ginger. Fry for 1 minute until fragrant.
Step 3
Add onions and curry leaves, sauté until the onions turn soft and slightly golden.
Step 4
Add the marinated mutton, salt, black pepper, and fresh ground coconut. Cook on medium heat for 4 minutes, stirring well.
Step 5
Pour in 2 cups of water, cover the pan, and let the mutton cook on low heat until tender and the water evaporates.

Drizzle with lemon juice and garnish with fresh coriander leaves.

Tip:
For extra crispiness, let the mutton fry on low heat for 10 minutes after the water dries up. Stir occasionally to get an even, golden-brown crust!
