500 grams lamb leg or shoulder, boneless

2 tablespoons olive oil
3.
2 cloves garlic, minced
4.
1 teaspoon dried rosemary
5.
1 teaspoon dried thyme

Salt and pepper to taste

4 cups mixed salad greens

1 cucumber, sliced
9.
1 red onion, thinly sliced

1 cup cherry tomatoes, halved

1/4 cup crumbled feta cheese

For the dressing:

3 tablespoons olive oil

2 tablespoons balsamic vinegar

1 teaspoon Dijon mustard

Step 1
Preheat the oven to 200°C (400°F).
Step 2
Place the lamb leg or shoulder in a baking dish. Drizzle with olive oil and sprinkle minced garlic, dried rosemary, dried thyme, salt, and pepper over the lamb. Rub the seasonings into the meat.
Step 3
Roast the lamb in the preheated oven for approximately 25-30 minutes for medium-rare, or adjust the cooking time according to your preferred level of doneness. Once cooked, remove from the oven and let it rest for a few minutes before slicing.
Step 4
In the meantime, prepare the salad. In a large bowl, combine the mixed salad greens, cucumber slices, red onion slices, cherry tomatoes, and crumbled feta cheese.

In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, salt, and pepper to make the dressing.
Step 6
Slice the roasted lamb into thin strips.
Step 7
Pour the dressing over the salad mixture and toss gently to coat all the ingredients.
