The Malvan coast is a paradise of seafood, coconut groves, and fiery flavours. But did you know that Malvani cuisine has one of the most flavorful mutton curries in India? Infused with roasted coconut, red chillies, and a touch of coastal magic, this dish is a celebration of Konkani heritage!

Onions – 2 large, finely chopped

Coconut – ½ cup, grated

Ginger-garlic paste – 1 tbsp

Malvani masala – 2 tbsp

Red chilli powder – 1 tbsp

Turmeric powder – ½ tbsp

Tamarind pulp – 1 tbsp (optional, for slight tanginess)
Direction
Step 1
Dry roast the grated coconut in a pan until golden brown. Let it cool, then grind it into a smooth paste with a little water.
Step 2
Heat oil in a pan, add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown.
Step 3
Add ginger-garlic paste and Malvani masala, and cook for 2 minutes until fragrant. Then, add red chilli powder, turmeric, and coriander powder. Stir well.
Step 4
Mix in the mutton pieces and cook on medium heat for about 10 minutes, stirring occasionally to ensure even cooking.
Step 5
Add the coconut paste, chopped tomatoes, and enough water to cover the mutton. Cover and simmer for 40 minutes or until the mutton is tender.
Step 6
Stir in the tamarind pulp (if using) and let it simmer for another 5 minutes to balance the flavours.
