This version of the classic club sandwich still delivers all the flavour and heartiness, featuring crispy turkey bacon, fresh avocado, and a variety of crisp vegetables, but skips the cooked turkey breast for a simpler, yet equally delicious meal.

Ingredients
1.
6 slices turkey bacon
2.
6 slices whole wheat or multigrain bread (or your choice of bread)

1 ripe avocado, sliced
4.
1/2 cup lettuce (iceberg or Romaine)
5.
1/2 cup tomato, sliced
6.
1/4 cup red onion, thinly sliced
7.
2 tablespoons mayonnaise
8.
1 tablespoon Dijon mustard
9.
Salt and black pepper to taste
10.
Butter or olive oil for toasting
Direction
Step 1: Cook the Turkey Bacon
In a skillet over medium heat, cook the turkey bacon until crispy, about 3-4 minutes per side. Once cooked, remove from the pan and drain on paper towels.
Step 2: Toast the Bread
While the bacon is cooking, toast the bread. You can either toast it in a toaster or lightly butter both sides of the bread and toast it in a skillet over medium heat until golden and crispy.
Step 3: Prepare the Sandwich Spread
In a small bowl, mix together the mayonnaise and Dijon mustard. Season with a pinch of salt and pepper.
Step 4: Assemble the Club Sandwich
Start with one slice of toasted bread. Spread the mayonnaise-Dijon mixture on one side.
Step 5: Layer the Ingredients
Layer on the lettuce, tomato, and the turkey bacon slices.
Step 6: Add the Second Slice of Bread
Top with another slice of toasted bread, spreading the mayonnaise mixture on the top side of this slice.
Step 7: Add the Avocado and More Layers
On this second slice of bread, layer the avocado slices, red onion, and additional turkey bacon slices.
Step 8: Complete the Sandwich
Top with the final slice of toasted bread, mayonnaise-side down.
Step 9: Serve
Cut the sandwich into quarters and secure each section with toothpicks to hold the layers in place. Serve immediately with your favorite side, such as chips or a crisp salad.
