Kolhapur, the land of wrestlers and rich history, is also home to one of Maharashtra’s most iconic mutton curries - Tamda Rassa. This dish is known for its bold red colour, which comes from the fiery Kolhapuri masala. If you love heat, this one's for you!
Ingredients
2.
Onion (sliced) - 2 large
3.
Tomato (chopped) - 2 medium
4.
Ginger-garlic paste - 1 tbsp
5.
Red chilli powder - 1/2 tsp
8.
Goda masala-1tbsp • Oil-2 tbsp
9.
Fresh coriander - for garnish
Direction
Step 1
Heat oil in a deep pan or kadhai over medium heat. Add sliced onions and sauté until golden brown.
Step 2
Stir in the ginger-garlic paste, turmeric, and red chilli powder. Cook for about a minute until fragrant.
Step 3
Add the chopped tomatoes, garam masala, and goda masala. Cook on medium heat until the oil starts to separate from the masala. This ensures deep, rich flavours.
Step 4
Add the mutton pieces and mix well to coat them with the masala. Sauté for 5-7 minutes to enhance the flavours.
Step 5
Pour in enough water to achieve the desired consistency. Cover and let it simmer on low heat for 40 minutes or until the mutton is tender. Stir occasionally.
Step 6
Garnish with fresh coriander leaves and serve hot with bhakri (jowar roti) or steamed rice.
