1 whole mutton leg (Raan) (approximately 2 kg)

2 tablespoons ginger-garlic paste

2 tablespoons yogurt
4.
2 tablespoons lemon juice
5.
2 teaspoons red chilli powder
6.
1 teaspoon turmeric powder
7.
2 teaspoons garam masala
8.
2 teaspoons coriander powder
9.
1 teaspoon cumin powder
10.
Salt to taste
11.
4 tablespoons oil
12.
Fresh coriander leaves for garnish

Lemon wedges for serving

Step 1
Make deep incisions in the mutton leg using a sharp knife to allow the marinade to penetrate.
Step 2
In a bowl, mix together ginger-garlic paste, yogurt, lemon juice, red chilli powder, turmeric powder, garam masala, coriander powder, cumin powder, and salt to form a smooth paste.
Step 3
Rub the marinade all over the mutton leg, ensuring it is evenly coated. Let it marinate for at least 2 hours or overnight in the refrigerator for better flavours.
Step 4
Preheat the oven to 180°C (350°F).
Step 5
Heat oil in a large oven-safe pan or skillet over medium-high heat. Sear the marinated mutton leg on all sides until browned.
Step 6
Transfer the pan with the mutton leg to the preheated oven. Roast for 2.5-3 hours, basting occasionally with the pan juices, until the meat is tender and cooked through.
Step 7
Once cooked, remove from the oven and let the mutton leg rest for a few minutes. Garnish with fresh coriander leaves. Slice the mutton leg and serve hot with lemon wedges.
