Did you know that the mighty Maratha warriors needed a protein-rich diet to fuel their long battles? Mutton Fry, a spicy, pan-tossed delicacy, was a staple for these fierce fighters. Today, it remains a favourite at every Maharashtrian feast.

Step 1
Heat oil in a pan over medium heat. Add cumin seeds and let them splutter. Then, add chopped onions and curry leaves. Sauté until the onions turn golden brown.

Add the grated ginger and minced garlic. Stir well and cook for a minute until fragrant. Then, add turmeric powder, red chilli powder, and coriander powder. Cook for about 5 minutes to blend the flavours.

Mix in the mutton pieces and stir well to coat them with the spice mixture.

Cover and cook on low heat, stirring occasionally, until the mutton becomes tender and absorbs all the flavours. If needed, sprinkle a little water to prevent burning.

Once the mutton is cooked, increase the heat and fry until any remaining moisture evaporates, and the meat turns slightly crispy.

Enjoy with chapati, bhakri, or steamed rice!
Tip
For an extra layer of flavour, squeeze a bit of lemon juice over the mutton fry before serving, or garnish with freshly chopped coriander leaves. This will enhance the spice balance and add a refreshing touch!
