1.
500 grams of mutton, cubed
2.
2 cups basmati rice, soaked for 30 minutes
3.
1 cup plain yoghurt
4.
2 large onions, thinly sliced
5.
2 tablespoons ginger-garlic paste
6.
1 tablespoon Biryani masala
7.
1 tablespoon red Chilli powder
8.
1 teaspoon turmeric powder
9.
1 teaspoon cumin powder
10.
1 teaspoon coriander powder
11.
1 teaspoon garam masala
12.
4 tablespoons cooking oil or ghee
13.
Salt to taste
14.
Fresh coriander leaves for garnish
15.
Fried onions for garnish (optional)

Lemon wedges for serving

Step 1
In a large mixing bowl, combine yoghurt, ginger-garlic paste, Biryani masala, red Chilli powder, turmeric powder, cumin powder, coriander powder, garam masala, and salt. Mix well to form a smooth marinade.
Step 2
Add the cubed mutton to the marinade, ensuring each piece is well coated. Cover the bowl with plastic wrap and let it marinate for at least 1 hour, allowing the flavours to infuse.
Step 3
In a separate pot, bring water to a boil. Add soaked basmati rice and cook until it's 70% cooked. Drain the rice and set aside.
Step 4
In a large, heavy-bottomed pan, heat cooking oil or ghee over medium heat. Add sliced onions and saute until golden brown and caramelized. Remove half of the fried onions for garnish.
Step 5
Add the marinated mutton to the pan and cook until it is browned on all sides.
Step 6
Layer the partially cooked rice over the mutton evenly. Sprinkle a bit of Biryani masala and fried onions on top.
Step 7
Cover the pan tightly with a lid, and let the biryani cook on low heat for about 30-40 minutes or until the mutton is tender, and the rice is fully cooked.
Step 8
Garnish the Mutton Biryani with fresh coriander leaves and the reserved fried onions.
Step 9
Serve hot, accompanied by lemon wedges for a zesty touch.
