500 grams of mutton, cubed

3 tablespoons Jamaican curry powder

2 tablespoons vegetable oil

1 onion, finely chopped

3 cloves garlic, minced

1 Scotch bonnet pepper, finely chopped

2 sprigs thyme
8.
2 potatoes, peeled and diced
9.
1 carrot, diced
10.
1 cup coconut milk
11.
2 cups water or broth

Salt and black pepper to taste

Fresh cilantro for garnish

Cooked rice or Jamaican rice and peas for serving

Step 1
In a bowl, coat the cubed mutton with Jamaican curry powder, ensuring each piece is well seasoned.
Step 2
Heat vegetable oil in a large pot over medium heat. Add the seasoned mutton and brown on all sides.
Step 3
Add finely chopped onion, minced garlic, Scotch bonnet pepper, and thyme to the pot. saute until the onions are translucent.
Step 4
Incorporate diced potatoes and carrots, stirring to coat them with the aromatic mixture.
Step 5
Pour in coconut milk and water or broth. Bring the mixture to a gentle simmer.
Step 6
Cover the pot and let the Jamaican Mutton Curry simmer on low heat for approximately 1.5 to 2 hours, or until the mutton is tender.

Season with salt and black pepper to taste. Adjust the spice level according to your preference.
