Duck Pastrami Pasta

Ingredients
1.
1/4 cup garlic-infused olive oil
2.
2 tablespoons chopped shallots
3.
1 pastrami-cured duck breast, thinly sliced
4.
1 tablespoon chopped thyme, plus sprigs for garnish
5.
1/4 pound linguine, cooked, drained, and tossed in oil
6.
Salt and pepper to taste
7.
2 tablespoons grated Parmesan cheese
Direction
Step 1: Sauté the Shallots
Heat the garlic-infused olive oil in a small sauté pan over medium heat. Add the chopped shallots and cook, stirring for about 1 minute until softened.
Step 2: Add Duck Pastrami and Thyme
Add the pastrami-cured duck breast slices and chopped thyme to the pan. Stir well and cook for 3 minutes, allowing the flavours to meld together.
Step 3: Toss with Linguine
Add the cooked linguine to the pan and toss to combine all the ingredients. Season with salt and pepper to taste.
Step 4: Serve
Transfer to serving plates, and sprinkle with grated Parmesan cheese. Garnish with thyme sprigs and serve immediately.
Note
This dish pairs beautifully with a light green salad and a glass of white wine for a gourmet meal.
