500 grams of mutton, cubed

2 tablespoons olive oil
3.
2 onions, finely chopped

3 cloves garlic, minced
5.
2 carrots, diced
6.
2 celery stalks, diced
7.
2 tablespoons tomato paste
8.
1 cup red wine
9.
2 cups beef or vegetable broth
10.
2 bay leaves
11.
1 teaspoon dried thyme
12.
1 teaspoon dried rosemary

Salt and black pepper to taste
14.
Fresh parsley for garnish

Cooked pasta or crusty bread for serving
Direction
Step 1
In a large pot, heat olive oil over medium heat. Add chopped onions, minced garlic, diced carrots, and diced celery. saute until vegetables are softened.
Step 2
Add cubed mutton to the pot and brown on all sides.
Step 3
Stir in tomato paste and cook for 2 minutes to enhance flavour.
Step 4
Pour in red wine to deglaze the pot, scraping up any browned bits from the bottom.
Step 5
Add beef or vegetable broth, bay leaves, dried thyme, dried rosemary, salt, and black pepper. Bring the mixture to a simmer.
Step 6
Cover the pot and let it simmer on low heat for about 1.5 to 2 hours, or until the mutton is tender.
Step 7
Remove the bay leaves and adjust seasoning if needed.
Step 8
Garnish the Daube De Mouton with fresh parsley for a burst of freshness. Serve the dish hot over cooked pasta or with crusty bread to soak up the flavourful sauce.
