Ingredients:
1. 4 salmon fillets
2. 2 tablespoons olive oil
3. Salt and pepper, to taste
4. 1 teaspoon garlic powder
5. 1 teaspoon paprika
6. 1 teaspoon dried oregano
7. 1 teaspoon dried thyme
8. 2 cups broccoli florets
9. 2 cups cherry tomatoes
10. 2 cups sliced zucchini
11. 1 red bell pepper, sliced
12. 1 yellow bell pepper, sliced
13. Fresh parsley, for garnish
Directions:
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil and season with salt, pepper, garlic powder, paprika, dried oregano, and dried thyme. Rub the seasonings into the salmon to coat it evenly.
3. In a large bowl, combine the broccoli florets, cherry tomatoes, sliced zucchini, red bell pepper, and yellow bell pepper. Drizzle with olive oil and sprinkle with salt and pepper. Toss the vegetables until they are evenly coated with oil and seasonings.
4. Spread the seasoned vegetables around the salmon on the baking sheet, making sure they are in a single layer.
5. Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender and slightly charred.
6. Once cooked, remove from the oven and garnish with fresh parsley.
