Cambay Tiger's fresh Surmai (King Fish) has a subtle taste that is rich and sweet. Surmai is excellent fish with thick white fillets; they have a pleasant flavour and only a few large bones. Kingfish have a moderate oiliness to them and they are easily adaptable to a variety of cooking methods. It has a rich and sweet flavour which is delicious on its own, it can also stand up to deeper flavours. Its pale pink flesh with firm, large flakes have a higher fat content and cleaner flavour.

Use: Surmai steaks can be used in dry fried fish dishes as well as a number of delicious curries and gravy recipes.
